Chelva Acacia, 2020 biodynamic Cinsault hand harvested from 50Absolute juice bomb. The climate in Sierra de Gredos, is just like Madrid city, very hot in summer and cold in winter. Luckily Fabios grapes sit high above sea level so never bake. This Chelva is crushed, destemmed, and then macerated for just 5 days before being basket pressed into acacia barrel. A lot of fun.
