The fruit was wild yeast fermented and left on skins for 2 weeks before being basket pressed and left to settle in tank for 15 months. It was then bottled without fining or filtration. It has not seen any oak and is a light, bright and juicy style bursting with sweet cherry and raspberry characters. It is great served cold, straight out of the fridge, on a warm day or at room temperature in those cooler
