Aligote En Coulezain, 2022 Portugal A long satisfying finish hasLayered and finessed with tangy acidity and an extended, saline finish. To produce the wine, a third of the Aligot grapes were destemmed and macerated on the skins for five days, with the rest directly pressed as whole clusters in a basket press, undergoing fermentation with indigenous yeasts, followed by six months of ageing in 350L used oak barrels, and bottling with a tiny amount of sulphur added.
